This weekend was all about Mexican food.

Saturday I attended my good friend Laura’s christening party for her little girl, which had a Mexican theme and therefore the gringo hat 😉

To get in the right Mexi mood for later I made Nick Philip and I a Mexican inspired lunch on my mums little balcony terrace.

Baked sweet potatos with filling:

  • Fried chicken
  • Fried corn
  • Roasted kale finely chopped
  • Roasted chickpeas
  • Feta cheese (on the side)
  • Butter (on the side)

It was yum to say the least and NP’s favourite dish of mine so far 🙂
