Today is sort of my day off, more precisely my day off from all the family gaterings I have during my Eater holiday.

I’ve just finished eating a homemade lunch; toasted multi bread from my local bakery with pan fried halibut and a parsley pesto on top. Yum yum…
The parsley pesto is made of flat-leaf parsley, Manchego cheese, blanched almonds, olive oil, lemon juice, salt and pepper – all blended together for maximum 5 seconds with a hand blender.
It’s traditional in Denmark to eat rye bread with fish fillet for Easter – this is my interpretation of it. Hope you enjoy 🙂
