The first night of my summer vacation was celebrated with a pizza party, homemade of course.
I made six different kinds of pizzas, all based on tortilla pancakes. I like using tortilla pancake because it’s a quick and easy solution. Also I love a thin crispy crust. Who doesn’t?
My favorite pizza was the eggplant and goat cheese pizza with rosemary, and my next favorite was the kale and Manchego cheese pizza with lots of olive oil and salt. Crispy and greasy!
My boyfriend’s fave was my version of a pepperoni pizza with fresh cut salami, grilled bell pepper, Manchego cheese, fresh oregano and chili. Hot!
Such and easy and low-carb way to make pizzas. Really, what’s not to love?
