Last night I had the pleasure of two of my favorite people; my boyfriend and girlfriend Steph. We were all tired from a long week and had gone to the countryside to relax and retreat with some easy and greasy Friday food… Burgers!
Instead of making the usual ham burger I prepared a build-your-own fish burger with lots of veggies:
- Romaine salad
- Red pepper
- Tomatoes with basil
- Portobello mushrooms /grilled
- Green beans with chili /grilled
- Eggplant /grilled
- Zucchini /grilled
Ketchup has never really been my thing, plus is doesn’t go great with fish, so I made my homemade parsley pesto blend with of olive oil, parmesan cheese, salt and of course parsley.
The fish cakes I made (or actually my boyfriend made them) from minced cod from the local fisherman shop in Hornbæk – soo good!
And last but not least, the burger buns – these I made from a super easy bread blend that my former personal trainer and friend Sara has developed with Finax. They’re rich on fiber and protein and most importantly they taste great. They also only take 1 ½ hour to make and all you need is water and yeast. So while the bread rises you can prepare the rest. Easy greasy!
