Tonight I made my first home cooked meal in my new kitchen from Kolon; a chick(en) salad.

Here’s what you need:

  • Chicken breast
  • Romaine lettuce
  • Fresh peas
  • Asparagus
  • Avocado
  • Flat-leaf parsley
  • Hazelnuts
  • Mustard
  • Lemon
  • Olive oil
  • White balsamic
  • Salt and pepper

I fried the chicken breast in a pan with olive oil, salt and pepper and sliced it afterwards – I find that the chicken stays more juicy this way. But first I roasted the asparagus and hazelnuts in the pan, so they could cool off before being added to the salad with the rest of the greens, that I prepared while the chicken fried.

Finally I made the key ingredient; the mustard and lemon dressing. It consists of a tea spoon of coarse-grained mustard, half a lemon, a table spoon of olive oil and white balsamic, salt and pepper.

The green salad is in itself really good as a side salad with fish, meat or poultry – like my chicken breast.
