By roosting everything together in the oven it all gets the same roasted taste which ties it all together. My menu tonight is therefore made up of everything from my fridge:

  • Mixed wild mushrooms
  • Broccolini
  • Zucchini
  • Cabbage
  • Kale
  • Fennel
  • Salmon
  • Parmesan cheese
  • Almonds

I kept an eye on all the groceries in the oven and gradually, as they became more and more brown, I took them out of the oven. It took 30-40 min. all together on 180 degrees.

The only groceries I didn’t roast in the oven was the fennel, that I just chopped into rustic pieces, the almonds, that I made on a pan with some tamarin and the parmesan cheese, that I sliced into thin pieces.

Once everything was roasted and chopped I mixed it all together into one juicy salad dripping with olive oil, salt and pepper. As a dressing (as if it wasn’t greasy enough) I made a oil vinegar dressing with some lemon and honey.

And now the big question is, did I eat all this by myself? Nooooo! I invited a friend over to help me. I hate food waste!
