After three days of eating out due to Copenhagen Fashion Week, I am looking forward to eating in.

As a true Dane I eat a lot of rye bread, but I have to say I’m not the biggest fan of our open sandwiches, at least not the traditional ones that we call smørrebrød.

The open sandwiches I make are far more mediterranean with a green pesto as the base instead of butter. As topping I love to use avocado and then either smoked salmon or tomato and mozzarella with basil on the top – this not only tastes good but looks pretty too.

And there you have it. Two boards of open sandwiches a la Mie!
